Butter Pecan Cookies

Deep flavor. Proper technique. Elevated finish.

There’s a clear difference between a good cookie and one that feels intentional.
Butter pecan cookies sit right in that space—layered, nutty, warm—not overly sweet, just balanced.

This version focuses on what matters most: real ingredients and proper technique to bring out the pecan.

How to Make Butter Pecan Cookies

Ingredients

  • 2 ½ cups (300g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (226g) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ tsp butter extract (optional, for deeper flavor)
  • 1 ½ cups pecans, roughly chopped

1. Toast the Pecans

Preheat oven to 350°F (175°C).
Spread pecans on a baking sheet and toast for 5–8 minutes, until fragrant and lightly golden.
Remove and let cool completely.

2. Prepare the Dough

In a bowl, whisk together:

  • flour
  • baking soda
  • salt

In a separate bowl, cream:

  • butter
  • granulated sugar
  • brown sugar

Mix for 3–5 minutes until light and fluffy.

Add:

  • eggs (one at a time)
  • vanilla extract
  • butter extract (if using)

Mix until smooth.

3. Combine

Gradually add dry ingredients into the wet mixture.
Mix until just combined—do not overmix.

Fold in pecans gently.

4. Chill the Dough

Cover and refrigerate for at least 1 hour (ideally longer).
This improves flavor and prevents the cookies from spreading too much.

5. Bake

Preheat oven to 375°F (190°C).
Scoop dough into balls and place on a lined baking sheet, spacing them about 2 inches apart.

Bake for 9–12 minutes, until:

  • edges are golden
  • centers are still soft

Let cookies cool on the tray for 5 minutes, then transfer to a rack.

Flavor Profile

  • Warm, toasted pecan notes
  • Rich, buttery base
  • Light caramel undertones
  • Soft center with a slight crisp edge

How to Make the Pecans Taste Even More “Nutty”

This is where you elevate the cookie.

1. Toast Them Properly (and Slightly Longer)

Push them just past warm—into deep golden. That’s where the flavor develops.

2. Chop Unevenly

Mix fine bits with larger chunks.
→ Fine pieces flavor the dough
→ Larger pieces give texture

3. Brown Part of the Butter

Brown ½ of the butter before mixing for a deeper, roasted flavor that mirrors the pecans.

4. Salt the Pecans Lightly After Toasting

A small pinch enhances and sharpens the nuttiness.

5. Use Butter Extract Strategically

Just a touch intensifies the classic butter pecan profile.

6. Crush a Small Portion into a Paste

Mix a bit into the dough to carry pecan flavor throughout.

7. Let the Dough Rest Longer

Overnight chilling deepens the overall flavor as everything melds together.
