Arugula Salad with Sweet Chipotle Pecans, Parmesan & Citrus Honey Pecan Vinaigrette

The Salad

Ingredients

  • 4 cups fresh arugula

  • 1 cup cucumbers, thinly sliced

  • 1 cup cherry tomatoes, halved

  • ½ cup Sweet Chipotle Pecans, roughly chopped

  • ¼ cup freshly shaved parmesan cheese

  • Handful of edible flowers (such as nasturtiums or pansies)

 


Citrus Honey Pecan Vinaigrette

Why it works:
Orange brightens spice. Honey balances heat. Dijon and garlic add structure. Cold-pressed pecan oil emulsifies everything into a silky, nourishing finish. The addition of finely chopped toasted pecans adds subtle texture throughout.

Ingredients

  • 3 tbsp fresh orange juice

  • 1 tbsp lemon juice

  • 1 tsp orange zest

  • 1 tbsp raw honey

  • 1 tsp Dijon mustard

  • 1 small garlic clove, finely grated

  • 1/3 cup cold-pressed pecan oil

  • Pinch sea salt

  • Tiny pinch black pepper

  • 1 tbsp finely chopped toasted pecans

Instructions
Whisk until fully emulsified and silky. Fold in chopped pecans last.


Assembly

  1. Lightly toss arugula with a few spoonfuls of vinaigette.

  2. Layer cucumbers and cherry tomatoes.

  3. Add shaved parmesan.

  4. Sprinkle Sweet Chipotle Pecans generously.

  5. Finish with edible flowers for color and freshness.

  6. Drizzle one final light spoon of dressing just before serving.
